Paganini kocke

Kad je u pitanju cokoladni kolac, od ovog mi zaista nema boljeg. Za ovaj kolac imam nekolio verzija, ali nekako mi je  ova koju je dvazen postavila najdraza, te kad trebam bogat cokoladni kolac ili tortu, izbor uvijek padne na ovaj recept.

Sastojci za biskvit:

 18 bjelanjaka                                                                                         

 18 kasika secera                                                                               
                                                                                    
3 kasike kakaa                                                                                           

500g przenih i mljevenih ljesnjaka
                                                                                            
 1 salju ljesnjaka sacuvati za fil                                                                                           
                                                                                            
Fil:

18 zumanjaka                                                                                            
                                                                                    
300 gr secera u prahu                                                                                            
                                                                                    
1.5 dl vode                                                                                           
                                                                                    
200 gr tamne cokolade ili za kuhanje                                                                                           

300 gr maslaca                                                                                           

 Dodatak za fil:

2 kasikice skrobrno brasna
2 dl mlijeka
2 kasike secera
1 vanilla

Ganaz

200 gr tamne cokolade ili cokolade za kuhanje                                                                                            
250 ml vrhnja za slag         

Priprema:

Pripremiti lim od rerne. Poproskati sasvim malo uljem, izrezati papir velicine pleha I njega premazati ili popriskati uljem I posuti brasnom.

Sastojke za kore podijeliti na 3 dijela. Mutiti 6 bjelanaca sa 6 kasika secera dok ne dobijemo cvrstu pjenu. Prosijati kakao I dodati u 150 gr ljesnjaka te njezno umijestiit u bjelance.
Peci na 180 C/ 375 F 13 - 15 minuta. Svaku koru podijeliti na dva dijela tako da cete na kraju imati 6 kora.

Skuhati zumanjke sa secerom I vodom na pari. Dodati cokoladu I mijestiti da se fino otopi. Skuhati posebno skrobno brasno u mlijeku kao puding I dodati u kremu. Sve dobro umijesiti. Dodati preostale ljesnjake. Ostaviti da se krema ohladi pa dodati izradjen puter I premazivati kore. Preostalom kremom premazati cijeli kolac.

Ugirjati vrhnje do vrenja te dodati cokoladu. Mijesiti da se cokolada istopi, pa preliti preko kolaca.
