artisan bread


 


6 cups of flour

1 tbs white sugar (or honey)

4 tsp dry yeast

3 tsp salt

2 tbs olive oil

3 cups warm water





Mix all ingredients together, cover and leave on warm spot for 3-4 hours to triple in volume (double is good too if is too cold).  


Shape with 1 tbs of flour and leave in banneton till oven is heating. 

Turn oven to 450 F. Put Douch oven pan in oven in same time when you turn your oven on. 

After 30 minutes turn your bread onto baking paper and put in hot pan carefully. Under paper tuck in 2-3 cubes of ice. 

Bake covered for about 30-35 minutes, then uncover and bake for 15 minutes more on 375. Turn oven off and leave bread for 15 minutes in oven with open doors. 

Wait for 5-10 minutes before you slice it.
