Najljepsi biskviti



Izvor recepta: Lily Baking:


Ingredients:⁠
cups White Lily Self-Rising Flour, plus more for dusting⁠
4 tablespoons salted butter, room temperature⁠
¼ cup cream cheese, softened, cut into cubes⁠
¾ to 1 cup whole buttermilk⁠
1 tablespoon salted butter, melted⁠
Directions:⁠
1. Preheat oven to 450°F. Lightly grease a baking sheet.⁠
2. In a large bowl, combine flour and room temperature butter, using your fingers to break up the butter. The result should resemble grated Parmesan.⁠
3. Add cream cheese, using your hands to mix it in, leaving a few larger pieces. Add buttermilk, and stir until dough is sticky and wet but not sloppy. (All flour should be incorporated.)⁠
4. Turn out dough on a lightly floured work surface. Dust the top of dough with flour, and roll to 1½-inch thickness. Using a 2-inch round cutter, cut dough. Arrange biscuits, with edges touching, on prepared pan. Brush with melted butter.⁠
5. Bake until tops are golden brown, 16 to 18 minutes, rotating pan halfway through baking. Let cool on pan on a wire rack for 5 minutes. Serve warm.⁠

sourdough rolls sa puterom za dorucak

 



120 gr startera

340 gr vode

10 gr soli

pola kasikice meda

500 gr brasna (kod mene svenamjensko)

100 gr putera


Starter treba biti veoma aktiv. Najbolje ga najhraniti navece i koristiti ujutru. 


Sve zajedno umiksati pa ostaviti pola sata da odmara. Posle toga uraditi strech and fold svakih pola sata, cetiri puta. U drugi strech i fold dodati pola putera, u treci drugu polovin. Puter mora biti zaledjen i narendan na krupno rende. 

Ostaviti da se volumen uveca oko 70%. Preshape pa onda shape posle deset minuta. Moze se koristiti kao jedna vekna, ili podijeliti u 6-8 dijelova i direktno u lim u kojem cete peci. 

Pokriti i ostaviti u frizideru da odmara narednih 12-18 sati.

Rernu ugrijati na 450 F pa smanjiti na 425 kad ubacimo peci, staviti serpicu sa vodom pa peci pokriveno 15 minuta. Onda otkriti i peci narednih 15 minuta. 

Rernu smanjiti na oko 250 F i peci jos 10tak minuta. Iskljuciti i ostaviti u otvorenoj rerni jos kojih 10tak minuta.
